Fat Free Cookies

Why do I promote the use of Cookies. First, a cookie can be made any size. The ones we make are about 4" across, and thick. This makes them a quick meal for me, and a filling snack for the teens.

2 c. quick oats
2 1/2 tsp. baking powder
2/3 c. Dark corn syrup or sorghum molasses (not blackstrap molasses)
2 c. flour
1/4 tsp. salt
2 egg whites or 1/2 c. Second Nature
2 tsp. vanilla
1 1/3 c. sugar
2 c. raisins or dried fruit

Bake 350 degrees 8 to 12 minutes or until set. Cool. The secret to good cookies is NOT waiting until they look cooked, or the timer is up. Stay by the stove. As soon as they smell good...they are done. They may still be soft, don't worry, they will harden on the counter.

It is important to use quick oats. While they have larger deposits of Nickle than normal oats, they soften faster and are more filling. However, if you are looking for colon cleansing benefits then you might want to change to a more 'whole' wheat or oat.

These 'refined' molasses will keep the cookies soft without the need for fat. They are the secret - and molasses does have a colon cleansing benefit.

The secret to good taste in health food is the vanilla. Do not use the cheap stuff in the grocery store. Buy the good stuff from a bakery shop.

Want soft cookies - use more fruit. Use fresh or frozen fruit. I once added peaches and watched my cookies and muffins triple in size.
